Pasta Fagiolo Soup
Ingredients:
1 tbsp olive oil
½ cup minced onion
½ cup minced carrot
3 cloves garlic minced
1 cup Ditalini pasta
2 15.5 oz. cans of white beans (rinsed and drained)
28 oz. can of tomato sauce
1 bayleaf
½ tsp salt
½ tsp pepper
3 tbsps minced fresh basil
3 tbsps minced fresh parsley
Directions:
Put olive oil in a large pot over medium heat and add the onion and carrots until soft
Add garlic for another minute
Add 4 cups of water and bring it to a boil
Add pasta until al dente and then add beans, tomato sauce, bayleaf, salt and pepper and simmer for 10 minutes
Top with basil and parsley to serve
