Pasta Fagiolo Soup

Ingredients: 

  • 1 tbsp olive oil

  • ½ cup minced onion

  • ½ cup minced carrot

  • 3 cloves garlic minced

  • 1 cup Ditalini pasta

  • 2 15.5 oz. cans of white beans (rinsed and drained)

  • 28 oz. can of tomato sauce

  • 1 bayleaf

  • ½ tsp salt

  • ½ tsp pepper

  • 3 tbsps minced fresh basil

  • 3 tbsps minced fresh parsley

Directions:

  1. Put olive oil in a large pot over medium heat and add the onion and carrots until soft

  2. Add garlic for another minute

  3. Add 4 cups of water and bring it to a boil

  4. Add pasta until al dente and then add beans, tomato sauce, bayleaf, salt and pepper and simmer for 10 minutes

  5. Top with basil and parsley to serve

  6. Enjoy!
