Mediterranean Quinoa Salad
Cook the quinoa according to the package (making sure to soak and rinse before cooking). Meanwhile put all the vinaigrette ingredients together and mix well. Add the quinoa, salad ingredients and vinaigrette together in a large bowl, mix well and serve.

I also make smoothies every day after my runs and with my kids. They are so fun, easy and you can customize them to meet your wellness goals.
