Sweet Potato Breakfast Bowl
Ingredients:
2 medium sweet potatoes
½ cup vanilla almond (soy, oat or coconut milk)
1 tsp vanilla extract
2 tbsps maple syrup
½ tsp cinnamon
2 tsps ground flax seed
Directions:
Heat oven to 400 degrees
Wash the potatoes and add to a baking sheet lined with parchment
Bakes for 45-60 minutes or until soft
Let potatoes cool and then remove the skin and add the rest to a mixing bowl
Add your alternative milk, vanilla, maple syrup, cinnamon and flax and mix well
Add to 4 bowls and serve with your favorite toppings
