Sweet Potato Breakfast Bowl

Ingredients:

  • 2 medium sweet potatoes

  • ½ cup vanilla almond (soy, oat or coconut milk)

  • 1 tsp vanilla extract

  • 2 tbsps maple syrup

  • ½ tsp cinnamon

  • 2 tsps ground flax seed

Directions:

  1. Heat oven to 400 degrees

  2. Wash the potatoes and add to a baking sheet lined with parchment

  3. Bakes for 45-60 minutes or until soft

  4. Let potatoes cool and then remove the skin and add the rest to a mixing bowl

  5. Add your alternative milk, vanilla, maple syrup, cinnamon and flax and mix well

  6. Add to 4 bowls and serve with your favorite toppings

    • Almond butter and bananas

    • Granola and honey

    • Greek yogurt and berries
